This recipe makes 5 Quart jars of pickles


 


Ingredients:


 


enough cucumbers to snuggly fill 5 jars


 


7 1/2 cups water


2 1/2 cups vinegar


1/2 cup pickling salt


2 fresh Dill sprigs ( per jar)


1/2 TSP. Pickling Spice ( per jar)


1/3 piece of garlic ( or more! per jar)


 


 


Method:


Heat oven to 425 F.


 


Wash Jars and put into hot oven to dry and sterilize.


Put canning lids into small pan of water and boil.


Wash cukes and set aside.


skin garlic cloves and set aside.


Put water, vinegar, and salt into large pot and bring to boiling. This is the Brine.


Remove a jar from the oven ( careful!! they will be very hot...use oven mitt to remove! )


Fill snuggly with washed Cucumbers, garlic, Dill weed and Pickling Spice. ( suggest that the garlic, pickling spice and Dill weed go in first )


Pour Brine over cucumbers in jar. Quickly take a boiling canning lid and place on the top, screwing down the outer canning ring tightly.


Place jar upside down for about 30 seconds, then turn rightside up on a tea towel on the counter. You should hear when they seal as they will POP!


If any jars haven't sealed ....you can open them, pour out brine and re-heat it to boiling. You will need to use another canning lid that has been boiled also....redo the steps from pouring the Brine over the Cucumbers on down.
