INGREDIENTS:


 


2 cups all purpose flour


4 tsp ground ginger


1 tsp baking soda


1 tsp baking powder


1/2 cup finely chopped crystallized ginger


3/4 cup butter


1 cup dark brown sugar


1 egg


1/4 cup fancy molasses


1 tsp vanilla


1 cup granulated sugar


 


INSTRUCTIONS:


 


~ In bowl , whisk together flour, ground ginger,baking soda, and baking powder. Stir in crystallized ginger.


 


~ In another, large bowl and using electric mixer, beat butter with brown sugar until fluffy. Beat in egg until combined.Beat in molasses and vanilla. Add flour mixture in three additions, beating on low speed until combined. Do not over beat. Cover dough with plastic wrap. Chill for 1 hour or until dough is firm.


 


~ Arrange oven racks so one is in top third of oven and other in bottom third. Preheat oven to 350 F. Line two baking sheets with parchment paper.


 


~  Place granulated sugar in shallow bowl. Form 1 rounded teaspoon chilled dough into ball, coat with sugar and place on prepared baking sheet. Repeat, spacing balls 2 inches apart, about 12 cookies per baking sheet.


 


~ Place one baking sheet in top third of oven and other in bottom third. Bake for 6 to 8 minutes or until tops are barely cracked on top. Cool cookies on baking sheets for 2 mins. before transfering to wire rack to cool. Allow baking sheets to cool for 1o mins. before baking off rest of dough on same parchment paper. Discard remaining sugar.
